Yellow Pumpkin Erissery Mathanga Erissery Ingredients:
(1) Small pieces of yellow pumpkin – 2 cup
(2) Cow gram – ¼ cup
(3) Grated coconut – ½ cup
(4) Pepper powder – 1 tea spoon
(5) Turmeric powder – ½ tea spoon
(6) Small onion – 3
(7) Oil – 2 tea spoon
(8) Red chilly – 3
(9) Mustard seeds – 1 tea spoon
(10) Curry leaves – a few
Procedure for cooking Yellow Pumpkin Erissery Mathanga Erissery
Grind coconut, pepper powder, turmeric powder and small onion into a rough
paste. Add water to cow gram and boil. When half cooked, add pumpkin pieces
and the rough paste of ingredients. Add salt also. Cook well and smash.
Heat oil in a pan and add mustard seeds to splutter. Add pieces of red
chilly, curry leaves and a little coconut and roast them. Then pour them
into the pumpkin curry and stir.
