How to cook or make Tapioca - Black Eye
Beans Curry (Maracheeni – Van Payar Puzhukku)
Ingredients:
(1) Fresh raw tapioca – 1 kg
Turmeric powder – ½ tea spoon
(2) Black Eye Beans – 150 grams
(3) Grated coconut – 1 piece
Chilly powder – ½ tea spoon
Garlic pellets – 3
Cumin seed – 1 pinch
(4) Coconut oil – 2 table spoon
Curry leaves – a little
Procedure for cooking Tapioca - Black Eye Beans Curry (Maracheeni –
Van Payar Puzhukku)
Cut tapioca into pieces, wash thoroughly, add turmeric powder and add
into boiling water and close the vessel with a lid. When the tapioca is
cooked well add salt stir and then remove the water. Add the black eye
beans into water kept in another vessel and boil. When it is cooked remove
the water. Grind the ingredients under (3) together into a rough paste.
Mix the cooked tapioca with the cooked black eye beans, add the rough
paste of ingredients and close the vessel. Then cook them in steam and
crush with a big spatula. Finally add coconut oil and curry leaves, stir
well and serve.
