How to cook or make Snake Gourd Stir Fry
(1) Snake gourd – 1
(2) Coconut – ¼ cup
(3) Green chilly – 4
(4) Turmeric powder – ¼ tea spoon
(5) Cumin seed – 1 pinch
(6) Coconut oil – ½ tea spoon
(7) Mustard seeds – 1 tea spoon
(8) Red chilly – 2
(9) Curry leaves – a few
(10) Salt – adjust to taste
Procedure for cooking Snake Gourd Stir Fry (Padavalanga Thoran)
Chop the snake gourd into small pieces. Add salt and cook the pieces.
It should not be over cooked. Smash coconut, green chilly, turmeric powder
and cumin seed together. Heat coconut oil in a vessel and add mustard
seeds into it to splutter. Then add pieces of red chilly and curry leaves.
Then add the pieces and then keep the smashed ingredients at the center.
Close the vessel with a lid and heat for some time. Then add salt, stir
well and serve. Cooked gram dhal also may be added with the snake gourd.
