Sambar – Vadakkan Reethi
Sambar in Northern Method Sambar – Vadakkan Reethi Ingredients:
(1) Drumstick – 2
(2) Carrot – 2
(3) Green brinjal – 1
(4) Tomato – 3
(5) Onion – 50 grams
(6) Turmeric powder – 1 tea spoon
(7) Chilly powder – 2 tea spoon
(8) Coriander seed powder – 1 tea spoon
(9) Toor dhal – ½ cup
(10) Tamarind – amla fruit size
Mustard seeds, curry leaves, fenugreek & dry chilly – to roast
and add
Procedure for cooking Sambar in Northern Method Sambar – Vadakkan
Reethi
Heat with a low flame ingredients (6) , (7) and (8). Chop ingredients
(1) to (5) into small pieces, add that to the heated ingredients, pour
water and boil. Then add tamarind extract and cooked dhal and boil. Roast
mustard seeds, curry leaves, fenugreek and dry chilly in heated oil and
pour into the sambar. Serve when a little hot.
