How to cook or make Plantain Stem Curry
(Vazhappindi Mulakooshyam)
Ingredients:
(1) Finely chopped plantain stem after removing fiber – 2 cups
(2) Turmeric powder – 1 pinch
(3) Toor dhal – 1 cup
(4) Salt – adjust to taste
(5) Coconut – half of a coconut
Red chilly – 2
Cumin seeds – ½ spoon
(6) Coconut oil – 1 table spoon
Mustard seeds – ½ tea spoon
Red chilly – 1
Black gram dhal – ¼ tea spoon
Curry leaves – a little
Procedure for cooking Plantain Stem Curry (Vazhappindi Mulakooshyam)
Mix the chopped plantain stem with sufficient water, turmeric powder and
salt and boil. Cook toor dhal separately. Grind coconut red chilly and
cumin seeds together and add the paste over the cooked plantain stem and
add the cooked dhal also in to that and mix well. Then boil the mixture.
Heat oil in a pan and add mustard seeds to splutter. Roast pieces of red
chilly, curry leaves and black gram dhal in the same oil and add them
into the curry and stir.
