How to cook or make Pearl Fish Fry (Karimeen
Pollichathu)
Ingredients:
(1) Pearl fish (Black fish) – 1 kg
(2) Coriander seed powder – 4 tea spoon
Turmeric powder – ½ tea spoon
Chilly powder – 2 table spoon
Pepper powder – 1 tea spoon
(3) Coconut oil – 3 table spoon
(4) Pepper powder – 1 tea spoon
Turmeric powder – ½ tea spoon
Salt – adjust to taste
(5) Coconut milk – 1 cup
(6) Small onion – ¼ cup
(7) Curry leaves – a few
(8) Green chilly – 5 (chopped)
(9) Garlic – 10 pellets
Procedure for cooking Pearl Fish Fry (Karimeen Pollichathu)
Wash the pearl fish and put lines on both sides. Apply ingredients under
(4) on the fish and keep for an hour. Grind ingredients under (2) together
finely. Heat oil in a pan and roast chopped pieces of small onion, green
chilly, garlic and curry leaves in that. Fry the fish in same oil and
keep aside. Heat remaining oil and splutter mustard seeds in that. Then
roast the ground mixture of ingredients in that oil. Then add the fried
fish and coconut milk. Add the roasted ingredients also and heat with
a low flame. When the water is dried and the ground ingredients are coated
over the fish, stop heating. Apply oil in a plantain leaf and keep the
fried fish in the leaf. Keep that in a thick bottomed vessel and heat.
Heat both sides by flipping the plantain leaf packets containing the fish.
When the fish becomes crisp, stop heating.
