How to cook or make Pavakka Sambar
Bitter Gourd Sambar Pavakka Sambar
Ingredients:
(1) Toor dhal – 500 grams
(2) Tamarind – 50 grams
(3) Bitter gourd – 100 grams
(4) Drumstick – 250 grams
(5) Small onion – 100 grams
(6) Turmeric powder – 1 pinch
(7) Salt – adjust to taste
(8) Asafoetida – 1 piece
(9) Jaggery – 1
(10) Dry coriander seeds – 100 grams
(11) Fenugreeks – 10 grams
(12) Gram dhal – 5 grams
(13) Chilly – 10 grams
(14) Coconut – ¼
(15) Ladies finger – 100 grams
(16) Tomato – 100 grams
(17) Mustard seeds – 100 grams
(18) Red chilly – 1
Procedure for cooking Pavakka Sambar
Mix tamarind with water and in that water add ingredients (6) to (9) and
boil well. Chop bitter gourd and drumstick into small pieces and cook
them in that water. Cook toor dhal by boiling in water and add the cooked
dhal to the pieces. Fry ingredients (10) to (15) in coconut oil and then
grind them. When the dhal and pieces boil, add this paste. Then when that
boils add pieces of tomato and ladies finger. When sambar boils, stop
heating and take that from the stove. Roast mustard seeds and red chilly
in coconut oil and pour them into the sambar.
