How to cook or make Ivy Gourd (Gherkins)
Stir Fry (Kovakka Thoran)
Ingredients:
(1) Ivy gourd – 250 grams
(2) Small onion – 100 grams
(3) Coconut – half part
Turmeric powder – ¼ tea spoon
Garlic – 2 pellets
Cumin seeds – ¼ tea spoon
Green chilly – 5
(4) Coconut oil – 2 table spoon
Mustard seeds – 1 tea spoon
Red chilly – 2
Curry leaves - a few
(5) Salt – adjust to taste
Procedure for cooking Ivy Gourd (Gherkins) Stir Fry (Kovakka Thoran)
Chop the ivy gourd and small onion into small pieces. Smash ingredients
under (3) together. Heat oil in a pan and add mustard seeds into that
to splutter followed by pieces of red chilly and curry leaves. Add the
chopped ivy gourd and small onion and add salt also. Add the smashed ingredients
at the center and close the pan with a lid. Cook the pieces in steam.
When they are cooked, open the vessel, stir well and take out.
