How to cook or make Green Brinjal Vindhalu
(Vazhuthananga Vindhalu)
Ingredients:
(1) Green Brinjal – 500 grams
(2) Big onion – 3
(3) Tomato – 4
(4) Chilly powder – 1 tea spoon
Turmeric powder – ¼ tea spoon
Garlic – 2 pellets
Fenugreek – ¼ tea spoon
Cumin seed – ¼ tea spoon
(5) Coconut oil – 1 tea spoon
(6) Salt – adjust to taste
(7) Vinegar – a little
Procedure for cooking Green Brinjal Vindhalu (Vazhuthananga Vindhalu)
Wash the green brinjal and cut into small pieces. Heat oil in a pan and
add salt and turmeric powder into that. Add the brinjal pieces into that
and stir well and heat. Grind chilly powder, fenugreek and cumin seeds
together. Chop tomato and big onion and roast them in oil. Add into that
vinegar, salt, the ground paste and the brinjal pieces and pour water.
Then boil that. On boiling vigorously stop heating and take the curry
from the stove.
