How to cook or make Green Brinjal Curry
(Vazhuthananga Curry)
Ingredients:
(1) Green Brinjal – 1 kg
(2) Big onion – 3
Ginger – 1 piece
Fennel – 1 tea spoon
Chopped tomato – 2
Chopped coriander leaves – ¼ cup
Cumin seed – ½ tea spoon
Cinnamon – 1 piece
Cardamom – 3
Clove – 4
Green chilly – 3
Chilly powder – 1 tea spoon
Salt – adjust to taste
(3) Mustard seeds – 1 tea spoon
Cumin seed – 1 tea spoon
Fennel – 1 tea spoon
(4) Turmeric powder – ½ tea spoon
Tamarind – equal to size of an Amla fruit
Garam Masala Powder – 1 tea spoon
Procedure for cooking Green Brinjal Curry (Vazhuthananga Curry)
Grind all the ingredients under (2). Heat oil in a pan and roast mustard
seeds, cumin seeds and fennel in that. Fill the ground mixture inside
each brinjal and keep the bringals spread in the oil. Take the remaining
ground mixture, tamarind juice, turmeric powder, chilly powder and salt
and sprinkle them over the brinjal. Add a little water into that and boil.
When the water is dried and the curry becomes thick add garam masala powder
and coriander leaves. Stir carefully without breaking the brinjals and
then take the curry out of the stove. This can be served with chappathi
and poori.
