How to cook or make Duck Meat Kuruma (Tharavirachi
Kuruma)
Ingredients:
(1) Duck meat – ½ kg
(2) Chopped pieces of big onion – 1 cup
(3) Curd – ½ cup
(4) Green chilly – 5
(5) Garlic – 3 pellets
(6) Ginger – 1 piece
(7) Coriander seed powder – 1 table spoon
(8) Turmeric powder – ½ tea spoon
(9) Chilly powder – 1 table spoon
(10) Masala Powder – 1 ½ tea spoon
(11) Grated coconut – ½ cup
(12) Salt, Curry leaves – as required
(13) Coconut oil – 4 table spoon
(14) Mustard seeds – ½ tea spoon
(15) Coriander leaves – a little
Procedure for cooking Duck Meat Kuruma (Tharavirachi Kuruma)
Wash the meat pieces, pour curd over them and stir well. Grind green chilly,
chilly powder, turmeric powder, coriander seed powder, garlic and ginger.
Heat oil in a pan and add mustard seeds to splutter. Roast pieces of big
onion in that. Then add the ground ingredients, meat pieces, curry leaves,
salt and sufficient quantity of water and boil. When the meat is half
cooked, add masala powder and close the pan with a lid. Grind coconut
to a fine paste. When the meat is cooked and the soup is getting thick
add the coconut paste and coriander leaves and stir well. When it is about
to boil, stop heating and take the pan out of the stove.
