How to cook or make Crab Curry (Njandu Curry)
Ingredients:
(1) Crab – 6
(2) Coconut – half part
(3) Chilly powder – 2 tea spoon
(4) Coriander seed powder – 4 tea spoon
(5) Big onion – 1
(6) Green chilly – 4
(7) Ginger paste – 1 tea spoon
(8) Cumin seed – ½ tea spoon
(9) Pepper – ¼ tea spoon
(10) Turmeric powder – ½ tea spoon
(11) Small onion chopped into small pieces – 2 table spoons
(12) Tomato – 2
(13) Fennel – ½ tea spoon
(14) Refined oil – 2 table spoon
(15) Curry leaves – a few
(16) Red chilly – 3
(17) Salt – adjust to taste
(18) Garlic paste – 1 tea spoon
Procedure for cooking Crab Curry (Njandu Curry)
Clean the crabs and cut them into pieces. Mix the pieces with chilly powder,
1 tea spoon coriander seed powder, ¼ tea spoon turmeric powder,
salt and water and boil. Pour oil in a pan and heat that. Roast grated
coconut, cumin seed, fennel, small onion, pepper, curry leaves, red chilly,
remaining coriander seed powder and turmeric powder in the heated oil.
Then grind the roasted ingredients finely. Heat the remaining oil and
in that roast chopped big onion and green chilly. Add ginger paste and
garlic paste into that and stir well. Then add the roasted ground ingredients
and stir. Finally add the cooked pieces of crab and one cup of water and
boil. After boiling, when the soup gets thick take the curry from the
stove.
