How to cook or make Cashew Nut Masala Curry
Andi Parippu Masala Curry
Ingredients:
(1) Raw cashew nut – 2 cups
(2) Coconut oil – 1 cup
(3) Onion chopped into long thin pieces – ¼ cup
Green chilly – 2
Chopped garlic – ¼ cup
(4) Turmeric powder – ½ tea spoon
Chilly powder – 1 ½ tea spoon
Coriander seeds powder – 1 ½ tea spoon
(5) Water – 2 ¼ cup
(6) Roasted ground coconut – 1 cup
(7) Salt – adjust to taste
(8) Curry leaves – a few
(9) Garam Masala Powder – ½ tea spoon
(10) Mustard seeds – ¼ tea spoon
(11) Coriander leaves – as required
Procedure for cooking Cashew Nut Masala Curry Andi Parippu Masala Curry
Remove the kernel of cashew nut, apply 1 tea spoon of coconut oil on them
and then wash in water. Pour 1 tea spoon of coconut oil in a pan and roast
the cashew nut in that for 3 minutes. Heat ½ cup of coconut oil
in another pan and roast all ingredients under (3) for 5 minutes. Then
to that add all ingredients under 4 and 2 cups of water and boil. On boiling,
add the roasted cashew nuts into that and cook for 10 minutes and add
salt also. Mix the roasted ground coconut with ¼ cup of water and
add that into the cooked cashew nuts. When that boils add curry leaves
and garam masala powder and boil again. Then take that from the stove.
Those who want can add coriander leaves also. Roast mustard seeds and
small onion in the remaining coconut oil and pour that over the cashew
nuts. This is an ideal side dish for chappathy, porotta and poori.
