How to cook or make Bitter Gourd Curry (Pavakka
Curry)
Ingredients:
(1) Bitter gourd – 5
(2) Toor dhal – 1 cup
(3) Tamarind – equal to size of a lemon
(4) Black gram dhal – 2 table spoon
(5) Red chilly – 6
(6) Coriander seeds – 2 table spoon
(7) Coconut – ½
(8) Asafoetida powder – 1/8 tea spoon
(9) Oil – 2 table spoon
(10) Turmeric powder – ¼ tea spoon
(11) Salt – adjust to taste
(12) Curry leaves – a little
(13) Pepper – ½ tea spoon
Procedure for cooking Bitter Gourd Curry (Pavakka Curry)
Wash the toor dhal and cook that. Remove the seeds from the bitter gourd
and chop into small pieces. Add tamarind juice, salt, turmeric powder
and a little water to the pieces and boil. Heat oil in a pan and roast
black gram dhal, coriander seed, asafoetida powder, pepper and red chilly
in the oil. Roast the grated coconut also. Grind all the roasted ingredients
together. Mix the cooked dhal with the cooked bitter goud. Mix the ground
paste of roasted ingredients with a little water and pour that over the
bitter gourd pieces. Add salt and boil. On boiling vigorously, stop heating
and take the curry from the stove. Heat oil in a pan and add mustard seeds
to splutter. Roast curry leaves and black gram dhal in the oil and pour
them over the curry.
