How to make Special Rice  (Special Choru) at Home

Chilly – Coriander Leaves

Making Special Rice  (Special Choru)

                      (1) Basmati rice – 250 grams
                      (2) Tamarind extract – 2 ounce
                      (3) Oil – 2 table spoon
                      (4) Mustard seeds – 1 tea spoon
                      (5) Big onion – 1 (chopped into small pieces)
                      (6) Curry leaves – 10 Nos.
                        (7) Red chilly – 3
                        (8) Fenugreek – 1 tea spoon
                        (9) Asafetida – 1 tea spoon
                       (10) Chilly powder – 1 tea spoon
                       (11) Coriander seeds powder – 1 tea spoon
                        (12) Turmeric powder – 1 tea spoon
                        (13) Salt – adjust to taste


Boil 100 ml. of water in a vessel. Pour tamarind juice in that and boil for 20 minutes. Continue heating till the water becomes thick. Then take it out of the stove and keep for cooling.

Boil 500 ml. of water in a big vessel. Add rice in that and boil for 25 minutes. Add a little salt also. After the rice is cooked, remove the water and keep the rice aside.

Wash the vessel thoroughly in which the rice was cooked. Pour oil in to that and heat. Add mustard seeds to splutter. Then add big onion, curry leaves, red chilly and fenu greek. Continue heating and stir well till onion becomes golden brown in color.

Then add ingredients (9) to (13). Stir for 2 to 3 minutes.  Then pour the tamarind mixed water into that and continue to stir for 15 minutes by which time it will become a thick gravy.
Add the cooked rice into that and stir well. Take that out of the stove, decorate with curry leaves and serve.
