Making Banana Jam ( Nendrappazha Jam)
Ingredients :
(1) Not too ripe banana, peeled and chopped into round slices – 1 kg
Clove – 12
Cinnamon, 1 inch long – 4 pieces
Orange juice OR juice of cooked ripe pineapple – 6 cups
(2) Sugar – 8 ½ cups
Citric acid – 1 tea spoon
Procedure :
Put ingredients under (1) in water, boil that, squeeze out the juice and filter that with a towel. The yield will be about 10 cups of juice. Mix that with the orange juice / pineapple juice. Then add sugar and citric acid. Transfer the mixture into a clean big aluminium vessel and stir with a wooden spatula. Keep on stirring and when it is somewhat thick, stop stirring. It should not be over thickened. Store that in clean bottles and when the juice is quite cold, close the bottle with a cap. Any foam remaining on the top must be removed before closing the bottle.
