This is a recipe of bharvan karela and shahi paneer recipe ,we have already prepared recipe for shahi paneer ,you could find it here – Shahi paneer recipe .We will insert the bharvan karelas into the shahi paneer curry .

Now let us make this bharvan karela recipe
In this bharvan karela recipe is a non paneer recipe ,but you could make shahi paneer recipe separately & could combine with this bharwan karela recipe as you wish .A way to make bharvan karela and shahi paneer is to insert bharvan karelas into the shahi paneer gravy ,so that it will become a new recipe .

Ingredients for making bharvan karela recipe is given below
Ingredients -
Karela / bitter gourd - 6-7 medium sized ones
Onion - 2 sliced
Nigella seeds / kalaunji - 1 tsp
Fennel seeds / saunf - 1 tsp
Fenugreek /methi - 1 tsp
Coriander powder - 1.5 tsp
Dry mango / Amchur powder - 1 tsp
Turmeric powder/ haldi - 0.5 tsp
Red chili powder/ laal mirch - 0.5 tsp
Salt to taste
2 tbsp mustard oil
2 tbsp tamarind/ imli pulp (soak imli in half a bowl of water and use the residue )
Thread - as much as required

Method of cooking Recipe of bharvan karela and shahi paneer


Peel the bitter gourd & keep aside the peel .Slit the bitter gourd or karela vertically & remove the seeds & this will make a pocket inside the karela .Now rub salt inside & outside the karela & keep aside for 5 hours .
After 5 houes squeeze out all the fluid from the bitter gourd and the peel ,wash the cleaned bitter gourd with water .

Make stuffing mixture

Heat 1 tbsp oil in a pan ,add nigella seeds and fennel seeds ,heat till they become aromatic ,now add sliced onions and sauté till onion turn brownish ,now add the squeezed out bitter gourd or karela peel and sauté for a minute ,now add all the spices ,sauté for 3 minutes ,now add tamarind pulp with some water ,sauté the mixture till oil starts separating from it .Now the mixture to be stuffed into the bharvan karela is ready .

Now with hand or spoon stuff the stuffing mixture into the bitter gourd ,now wrap the stuffed karela with a thread to ensure the fillings will not spill out .Now shallow fry all the bitter gourds till they are cooked ,now keep aside all the bitter gourds ,now youe bharvan karela is ready to add into paneer shahi recipe
