Pappaya sweet chutney Kappalanga sweet chutney recipe
Ingredients:-
• 1. Cut pappaya pieces after removing the skin, 1/4 inch breadth
and 1/2 inch thick - 1/2 kg
• 2.Quicklime - 1/2 teaspoon
• 3.Water - 4 litres
• 4. Sugar - 1 kg
• 5.Water - 1 cup
• 6.Ginger- cut into long pieces - 1 teaspoon
• 7.Garlic pieces without removing skin - 6
• 8.Orange juice - 2 cups
• 9. Lemon juice - quarter cup
• 10.Vineger - 1/2 cup
• 11.Chilli powder - 1/2 teaspoon
• 12.Salt - to taste.
13. garlic pellets half cooked - 1/2 cup
Method of preparation Pappaya sweet chutney Kappalanga sweet chutney
recipe:-
• Dissolve Quicklime in water. Keep the pappaya
• pieces in the solution for one night. In the morning take
• them out, wash thoroughly and keep them in water during day time.In
• the night keep them in freshly prepared quicklime solution
• again. Take them out in the next morning and wash in water. Steam
cook
• the pieces in an idly cooker . Take them out and sponge out the
water
• from the pappaya.
• Take the sugar in a bowl. Add water and melt the sugar. Boil it
along
• with ginger and garlic. Filter the liquid. The recipe will be
a thick
• paste.
• Add all other ingredients to it and boil until it appear like
thread
• while pouring down. Add the pappaya into that and boil
• so as to evaporate the water content .When the paste is loosely
coated
• over the pieces, take it out, allow to cool and store in a glass
• bottle.

• If the water in the paste is not evaporated completely, chutney
will get spoiled.
