Chicken Kabab South Indian Kebab ,Kerala ,tamil nadu styles
• Chicken Kabab Ingredients:-
•
• 1. Chicken (chest portion) - 1 1/2 kg
• 2. salt - to taste
• 3. lemon juice - 30 ml
• 4. puree of ginger or garlic - 50 gms
• 5. cumin seed - 5 gms
• 6. curd - 75 gms
• 7. white part of egg - 1
• 8. corn flour - 15 gms
• 9. scum of milk - 75 ml
• 10. elachi powder - 5 gms
• 11. nutmeg powder - 3 gms
• 12. green chilly cut into small pieces - 8 gms
• 13. coriander leaves - 10 gms

• Method of preparation Chicken Kabab :
•
• Make a puree of ginger/garlic, lemon juice and salt and apply
it on the chicken and keep for 2 to 3 hrs. Shake the milk scum and mix
it with curd. Make a mixture of white part of egg and corn flour. Add
this mixture to the scum of
• milk in curd. Make a mixture of cumin seed, elachi powder and
nutmeg powder. Add these two mixtures to the chicken. Add small pieces
of green chilly and coriander leaves. Keep for another 2 hrs. Then roast
it on a tandoori oven.
