Kathirikka Channa Masala Brinjal Channa Masala Ingredients:-
(1) Big brinjal – 300 grams
(2) Cooked White gram – 150 grams
(3) Channa Masala – 3 tea spoon
(4) chopped pieces of spinach leaves – ½ cup
(5) Tomato juice – 200 grams
(6) Ginger, garlic paste – 2 tea spoon
(7) Turmeric powder – ½ tea spoon
(8) Sugar – 1 tea spoon
(9) Salt – adjust to taste
(10) coriander leaves – a handful
(11) sunflower oil – 1 table spoon
Method of preparation Kathirikka Channa Masala Brinjal Channa Masala
Roast the brinjal in a vessel. Heat with a low flame only. After roasting
remove the skin and keep the pulp part aside. Using microwave, this can
be done in 5 minutes.
Heat oil in a non stick pan and roast the ginger onion paste in that.
When the roasting smell comes add turmeric powder and channa masala and
stir well. Transfer the brinjal pulp into this followed by cooked white
gram. Close the vessel and heat for 5 minutes. Then open the vessel and
add spinach leaves, tomato juice, sugar and salt one by one and stir well.
When the water is completely dried, stop heating , sprinkle coriander
leaves and serve.
