Auberjine /Green Brinjal Pickle Vazhuthananga Achar South Indian,Kerala

(1) Green Brinjal – 3
(2) Oil – 100 ml
(3) Red onion – 30 grams
(4) Garlic – 10 pellets
(5) Ginger – 1 small piece
(6) Chilly powder – 1 ½ table spoon
(7) Turmeric powder – ½ tea spoon
(8) Salt – to taste
(9) Red chilly – 2
(10) Curry leaves – a little
(11) Fenugreek – ¼ tea spoon
Procedure for cooking Auberjine /Green Brinjal Pickle Vazhuthananga Achar
Cut green brinjal into 1 inch long pieces. Keep them dipped in water.
Heat oil and roast the brinjal pieces in that. Chop the onion into long
pieces. Roast the onion pieces n the remaining oil. Then chop garlic and
chopped ginger also. Heat oil in the pan and add mustard seeds to splutter.
Add brinjal pieces, curry leaves, roasted ingredients, pieces of red chilly,
fenugreek, chilly powder, turmeric powder and salt. Stir well. Stop heating
and take from the stove.
