Tender Green Jack Fruit Pickle Idi Chakka Achar Ingredients:
(1) Tender green jack fruit chopped into very small pieces – 1 kg
(2) Dry chilly – 50 grams
(3) Green chilly – 15 (chopped)
(4) Ginger – 50 grams (chopped)
(5) Fenugreek, pepper – 1 tea spoon
(6) Mustard seeds – 2 tea spoon
(7) Turmeric powder – 1 table spoon
(8) Garlic – 100 grams
(9) Oil – 3 cup
(10) Vinegar – 3 cup
(11) Curry leaves, soap – as required
Procedure for cooking Tender Green Jack Fruit Pickle Idi Chakka Achar
Keep the tender green jack fruit pieces in an idly cooker and cook them
with steam. Then rub the pieces with turmeric powder and keep them exposed
to sunlight for an hour. Roast and grind fenugreek, red chilly and pepper.
Heat oil in a pan and roast ginger, green chilly and garlic in that. Then
add the jack fruit pieces, masala powders, vinegar and salt into that
and stir well. Take them out and keep for cooling. Then store in a porcelain
jar.
