Sweet and Sour Fish South Indian,Kerala ,tamil nadu styles receipe
Sweet and Sour Fish Ingredients:
(1) Fish (fillets) – 400 grams
(2) Oil – 3 table spoon + sufficient quantity for frying
(3) Corn Starch – 5 table spoon
(4) Big onion – 1
(5) Ginger – 1 piece
(6) Garlic – 4, 6 pellets
(7) Capsicum – 1
(8) Red capsicum – 1 ½
(9) Yellow capsicum – 1 ½
(10) Pineapple (cut into long pieces) – 1
(11) Tomato sauce – 4 table spoon
Sugar – 2 table spoon
Pineapple juice – ½
Aginomoto – ¼ tea spoon
White pepper powder – ½ tea spoon
Salt – adjust to taste
(12) Fish/Chicken stock – 2 cup
(13) Vinegar – 2 table spoon
Procedure for cooking Sweet and Sour Fish
Wash the fillets and cut them into 1 inch pieces. Roll the fish over 2
tea spoon corn starch. Pour oil into a wok and deep fry the fish in that.
Cut the big onion into big pieces and then separate the petals. Chop ginger
and garlic into small pieces. Remove seed from capsicum and cut into pieces
of 1 inch length. Mix all ingredients under (110 in one cup of fish stock
and stir well. Pour 3 tea spoons of oil in a wok and roast the ginger
and garlic in that. Then add pieces of big onion and roast again. Add
the capsicum into the stock in which ingredients under (11) are mixed.
Mix the corn starch in water and add the solution in to the remaining
stock. When it becomes thick add fried fish, chopped pineapple and vinegar;
serve hot.
