Raw Jack Fruit Pickle Chakka Achar Ingredients:
(1) Jack fruit slices (raw) – 25
(2) Mango – 1
(3) Green chilly – 50 grams
(4) Smashed ginger – 100 grams
(5) Asafoetida – 1 tea spoon
(6) Fenugreek – 2 tea spoon
(7) Mustard seeds – 2 tea spoon
(8) Salt – as required
(9) Oil – as required
(10) Chilly powder – 2 table spoon
Procedure for cooking Raw Jack Fruit Pickle Chakka Achar
Remove the skin of the raw mango and smash that. Clean the jack fruit
slices, remove the seed and chop into small pieces. Roast fenugreek and
mustard seeds separately and grind. Transfer the jack fruit pieces into
a vessel, add salt, asafetida and water and boil. When it is half cooked
stop heating and decant the water. Dry the slices by keeping them in the
sun. Then mix with smashed mango, green chilly, ginger, fenugreek powder,
mustard seed powder and chilly powder and store in a jar. Pour a little
oil at the top.
