Nut Meg Pickle Jaathikka Achar Ingredients:
(1) Nutmeg – 12
(2) Garlic – 12 pellets
(3) Chilly powder – 4 table spoon
(4) Ginger – 1 small piece
(5) Fenugreek powder – 1 tea spoon
(6) Asafoetida – ½ tea spoon
(7) Vinegar – 2 tea spoon
(8) Curry leave – a little
(9) Mustard seeds – ½ tea spoon
(10) Salt – adjust to taste
(11) Oil – 2 table spoon
(12) Sugar – 1 table spoon
Procedure for cooking Nut Meg Pickle Jaathikka Achar
Wash the nutmeg and chop into small pieces. Apply salt on the pieces and
keep for 1 ½ hours. Heat oil in a pan and roast ginger and garlic
in that. Roast chilly powder, asafetida powder and fenugreek powder one
by one. Add mustard seeds to splutter and add curry leaves and grind the
whole mixture. Then add vinegar, salt, ginger, garlic, sugar and a little
water and heat with a low flame. Now add the outer soft shell of nutmeg
into that along with the ground ingredients, stir well and take out.
