Lemon Pickle (Onion Mixed) Naranga Achar – Ulli Cherthathu
Ingredients:
(1) Lemon – 1 kg
(2) Salt – adjust to taste
(3) Chilly powder – 75 grams
(4) Coriander seed powder – 20 grams
(5) Turmeric powder – 20 grams
(6) Asafoetida powder – 30 grams
(7) Green chilly – 30 grams
(8) Garlic – 50 grams
(9) Ginger – 30 grams
(10) Curry leaves – as required
(11) Small onion – 50 grams
(12) Gingili oil – 250 grams
(13) Vinegar – as required
(14) Mustard seeds – 3 tea spoon
(15) Fenugreek powder – 30 grams
Procedure for cooking Naranga Achar
Wash the lemon and keep for some time in passing steam. Then take that
out, wipe, cut into four pieces and keep for a day. Heat oil in the pan
and add mustard seeds to splutter. Roast the smashed onion, green chilly,
Garlic and ginger in that. Also add chilly powder, coriander seed powder
and turmeric powder. Add asafetida and fenugreek powder. After adding
vinegar drop the lemon pieces and stir. Stir well so that the pickle will
not get stuck to the bottom of the pan. Then take from the stove and on
cooling transfer into clean bottles.
