Mutton Biriyani South Indian,Kerala ,tamil nadu styles receipe
Mutton Biriyani Ingredients:
(1) Biriyani rice – 1 kg
(2) Mutton cut into big pieces – 1 kg
(3) Ghee – 250 grams
(4) Big onion – 250 grams
(5) Cinnamon – 4 pieces
(6) Dry grapes
Cashew nuts 50 grams
(7) Ginger – 1 table spoon
(8) Garlic – 5 pellets
(9) Elachi - 6
(10) Nut Meg – ¼ piece
(11) Fennel – 1 tea spoon
(12) Paneer – 2 tea spoon
(13) Maida – 2 cup
(14) Curry leaves – as required
Coriander leaves, Pudina leaves – as required
(15) Turmeric powder – as required (for color
(16) Poppy seed – as required
(17) Salt – adjust to taste
(18) Lemon juice – 1 table spoon
(19) Ground coriander seeds – 2 table spoons
Procedure for cooking Mutton Biriyani
Wash the rice. Mix with cinnamon and salt and cook the rice. When half
cooked, filter and spread the rice on a flat vessel. Fry dry grapes, cashew
nuts and half of chopped big onion pieces in ghee and take out. In the
same ghee, fry the remaining pieces of big onion also.
Mix the following items together, add required quantity of salt and stir
well:-
Pieces of mutton
Fried pieces of big onion
Smashed garlic and ginger
Chopped leaves
Coriander seeds and poppy seeds (ground)
Elachi and nutmeg (powdered)
Lemon juice
Then cook the above items and spread in a vessel. Spread half of the rice
over that. Spread fried onion, cashew nuts and dry grapes over the rice.
Then spread the remaining rice over that. Pour ghee and paneer over the
rice. Close the vessel with a lid. Apply maida paste at the joint between
the vessel and the lid. This is to prevent the vapour from escaping. After
cooking, take it out, mix with rice and meat and serve.
