Mussel Pickle Kadukka Achar South Indian,Kerala ,tamil nadu styles receipe
Mussel Pickle Kadukka Achar Ingredients:
(1) Mussels – 100
(2) Red chilly – ¾ cup
Turmeric powder – 1 tea spoon
Cumin seed – ½ tea spoon
Fenugreek – ½ tea spoon
Tomato – 3
(3) Green chilly – 12
Chopped ginger – 1 tea spoon
Garlic – 20 pellets
(4) Mustard seeds – ½ tea spoon
(5) Oil, Salt – as required
(6) Chilly powder – 3 tea spoon
(7) Vinegar – 2 cups
Procedure for cooking Mussel Pickle Kadukka Achar
Rub the mussels, wash, boil and take the cream from inside. Clean the
cream, apply chilly powder and salt on the cream and keep it in the sun.
Then fry them in oil. Grind the ingredients under (2) with a little vinegar.
Wash the grinding stone with vinegar only. Chop the ingredients under
(3) into small pieces and roast them in a pan when mustard seeds are added
into heated oil to splutter. Then add the mixture of ground ingredients
under (2), stir well and roast them till the oil become translucent. Also
add the vinegar which was used to wash the grinding stone. When water
is dried, add mussels and salt and stir well. Then take from the stove
and keep for cooling. Keep in glass bottles.
