Mixed Vegetable Manchurian South Indian,Kerala ,tamil nadu styles receipe
Mixed Vegetable Manchurian Ingredients:
(1) Cabbage – 1 (medium size)
(2) Carrot – 1 (medium size)
(3) French beans – 8, 10
(4) Spring onion – 3 (medium size)
(5) Capsicum – 1 (medium size)
(6) Salt – adjust to taste
(7) Refined Maida – ¼ cup
(8) Corn Starch – ¼ cup
(9) Oil – sufficient for frying and for sauce
(10) Soya sauce – 3 table spoon
(11) Ginger – 1 piece
(12) Garlic – 4, 6 pellets
(13) Green chilly – 3
(14) Celery – 2 inches
(15) Sugar – 1 tea spoon
(16) Aginomoto – ½ tea spoon
(17) Oil – 2 table spoon
(18) Vegetable stock – 2 ½ tea spoon
(19) Vinegar – 1 table spoon
Procedure for cooking Mixed Vegetable Manchurian
Chop carrot and cabbage. Chop beans and spring onion into small pieces.
Keep aside the green part of spring onion for decoration. Chop capsicum
(after removing seed) and green chilly into small pieces. Also chop garlic,
ginger and celery into small pieces.
Mix 3 table spoons of corn starch in one cup of water. Mix the cabbage,
carrot, beans and salt together and stir well. Add spring onion, capsicum,
filtered maida and ¼ part of the corn starch solution into that,
stir well and mould the mixture into balls with size of a lemon. Heat
oil in a wok and fry the balls in that till they become golden brown color.
Take them out and blot the oil. Heat oil in another wok and fry the ginger
and garlic followed by celery and green chilly. Then add soya sauce, sugar,
aginomoto, salt and vegetable shake and boil the mixture. Add the remaining
corn starch solution and keep on stirring till it becomes thick. Now stop
heating and add the fried balls into this mixture followed by a little
vinegar and stir well. Decorate with green part of spring onion and serve.
This dish can be made dry by adding one cup of vegetable stock and 1 ½
table spoon of corn starch.
