Ginger Pickle Inji Achar South Indian,Kerala ,tamil nadu styles receipe
Ginger Pickle Inji Achar Ingredients:
(1) Ginger – 100 grams
(2) Chilly powder – 1 tea spoon
(3) Coriander seed powder – 1 tea spoon
(4) Coconut oil – 50 ml
(5) Salt – adjust to taste
(6) Green chilly – 5 Nos.
(7) Jaggery – as required
(8) Tamarind – as required
Procedure for cooking Ginger Pickle Inji Achar
Clean the ginger and chop into thin pieces. Heat coconut oil in a pan
and roast the ginger in that. Add green chilly in coconut oil and stir.
Add chilly powder, coriander seed powder, tamarind juice and salt and
ginger pieces into that and boil. Melt jiggery along with water and after
melting, filter the melted jiggery and add that into the ginger pieces
and mix well. When the mixture becomes a thick liquid, stop heating and
take out of the stove. On cooling, transfer into jar.
