Procedure for cooking Ghee Fish Biriyani Nei Meen Biriyani
Chop big onion into thin pieces and roast them in coconut oil. Take half
of that and mix with cashew nut, dry grapes and half of powdered mixture
of ingredients under (11). Smash ginger, green chilly and garlic and keep
that. Mix that with coriander leaves, pudina leaves, curry leaves, turmeric
powder and coriander seed powder and heat. Also add the remaining powdered
mixture of ingredients under (11) and the remaining roasted pieces of
big onion. Mix the fish pieces with salt and turmeric powder and half
– fry them in oil.
Prepare ghee rice by adding water into rice at the rate of 1 ½
cup of water for one cup rice. Also add salt and ghee as required. Take
half of the roasted tomato masala and keep that separately. Spread the
remaining part in a vessel and spread half of the fried fish pieces above
that. Add the remaining tomato masala above that. Spread a cloth above
that and spread cooked rice over that. Add half of the rice first and
over that spread the onion mixture. Then add the remaining rice at the
top, sprinkle a little ghee over that and close the vessel with a lid.
Add burning charcoal over the lid. After 30 minutes, transfer the rice
into another vessel. Take the cloth spread over the fish masala and squeeze
out the ghee into the rice. The ghee under the masala also may be poured
into the rice. Now the ghee fish biriyani is ready.
