Fish – Mango Pickle Meen – Manga Achar Ingredients:
(1) Fish with thick flesh – 1 kg
(2) Mango paste – 1 cup
(3) Ginger – 1 piece
(4) Garlic – 10 pellets
(5) Oil – 1 ½ cup
(6) Salt – adjust to taste
(7) Sugar – a little
(8) Vinegar – 1 cup
(9) Chilly powder – 2 table spoon
(10) Chilly rind paste – 2 table spoon
(11) Chopped ginger – 2 table spoon
(12) Chopped garlic – 2 table spoon
Procedure for cooking Fish – Mango Pickle Meen – Manga Achar
Apply salt over the fish pieces and keep them in the sun for some time.
Take it back before it becomes dry. Then fry them in oil without dipping
in oil. Keep for sometime to get rid of the oil. Boil the vinegar after
adding sugar into it. Soak ½ tea spoon fenugreek in vinegar and
grind. Soak the chilly rind in vinegar and grind. When the oil is hot
roast both the pastes in that. Then roast chopped ginger and ginger paste,
chopped garlic and garlic paste and chilly powder. Finally ad mango paste
and stir till the water is completely dried. When the mixture boils, add
fish pieces and when they become hot take from the stove. On cooling,
transfer into dry bottles.
