Bilimbi Pickle Ilumbippuli Achar Ingredients:
(1) Tender Bilimbi – ½ kg
(2) Chilly powder – 4 tea spoon
Asafoetida powder – ¾ tea spoon
Turmeric powder – ¼ tea spoon
(3) Gingili oil – 2 table spoon
(4) Boiled cooled water – ¾ cup
(5) Salt – adjust to taste
Procedure for cooking Bilimbi Pickle Ilumbippuli Achar
Wash the bilimbi and dry it by either keeping in a sieve or keeping in
a towel. Cut the bilimbi into 4 long pieces. Heat Gingili oil in a pan.
Add the bilimbi pieces into the pan and roast them with a low flame. The
bilimbi pieces should not be over cooked. When the pieces are somewhat
soft add chilly powder, turmeric powder and asafoetida powder and stir
well. Heat for a few more seconds and then add salt and take out of the
stove. Pour boiled cooled water and stir well. On cooling transfer into
bottles and keep the bottles closed tightly.
