Introduction to Recipe for Cauliflower Pachidi
This is an unusual combination of cauliflower and yogurt. It is very tasty
and can be prepared very quickly for breakfast.
1 medium cauliflower, cut into florets
250ml (1 cup) yogurt
½ teaspoon cracked black pepper
2 tablespoons oil
1 large onion, finely chopped
1 tablespoon finely chopped fresh ginger
2 garlic cloves, finely chopped
1 teaspoon coriander seeds
Method of preparation Recipe for Cauliflower Pachidi
Wash and cut the cauliflower in to small florets and allow them to dry
on a paper or on a dry cloth. Wash the onion and chop it finely. Wash
the ginger, peel it and chop it finely.
1tsp of coriander seeds and ½ tsp of black pepper should be ground
to a fine powder.
Take a bowl and pour the yogurt add salt and freshly ground pepper and
coriander mix well
Add the cauliflower florets to the yogurt mixture and keep aside

Heat the oil in a pan and fry the onions till golden brown in colour then
add the chopped ginger and garlic .Sauté it for 3-4 minutes. If
needed you can add little of water and cook for 8minutes.
Method of serving Recipe for Cauliflower Pachidi
The cauliflower Pachadi can be served with any variety of rice and even
with the idly, dosa roti in the morning breakfast.
It is a very nice combination of yogurt and cauliflower and also an alternate
type of raitha that can be prepared to surprise your guests and family.
