Recipe for Cauliflower Leaf Stalk Pulao


Introduction
We are glad to share a very different recipe in which you can use the leaves and stalks of cauliflower, peels of different vegetables which are usually thrown away. It has lot of nutritious value and is rich in fibre. Your family will enjoy the taste.

Ingredients
2 cups cooked and cooled basmati rice
8-10 tender cauliflower stalk, cleaned, cut thinly, slanting
1 cauliflower floret, broken
1 potato, chopped with peels
½ cup peas, boiled
1 stalk curry leaves
1 tbsp. coriander leaves finely chopped
½ cup ridge gourd, bottle gourd, cucumber peels, grated.
10-12, spinach stems, chopped
¼ cup fresh coconut, scraped
1 lemon, juice, extracted
3 green chillies
1" piece ginger, peeled
2-3 flakes garlic, peeled
1 tbsp. curds
½ tsp. turmeric powder
½ tsp. garam masala powder
3-4 pinches asafetida
½ tsp - each cumin & mustard seeds
1 bay leaf
salt to taste
2 tbsp oil

Cutting
Wash and cut the cauliflower stalks in to thin slanting slices and the florets should be broken and kept aside .chop the potato in to cubes with the peel. The peels of bottle gourd, ridge gourd cucumber should be grated. The stems of spinach should be washed and chopped. The coconut has to be grated. Ginger and garlic has to be peeled

Grinding
Take the jar of a mixer put the coconut, ginger, garlic, green chillies, peels and curd grind it to a smooth paste.

Cook the basmati rice in the usual way and allow it to cool, each cooked grain should be separate. Heat oil in a heavy bottom vessel and add cumin and mustard seeds allow it to splutter. Now add the curry leaves, hing, potato, florets, cauliflower stalks and fry till the potatoes are tender. Add the ground paste mix well till the oil oozes out. Add the peas, spinach stem and cook for a while then add the masalas and allow it to simmer
Mix the well cooled basmati rice with the cooked mixture. Garnish it with finely chopped coriander leaves or even with fried cashew nuts (optional) and heat it again in a microwave or on medium flame. Your delicious pulao is now ready to eat.


Method of serving Recipe for Cauliflower Leaf Stalk Pulao
Serve the pulao with any raitha or even with hot kadhi.
