Method of cooking Recipe for Cauliflower
Chutney
Introduction
This chutney is a very unusual combination than the regular ones and you
never know until you try. Here we do not have to throw the cauliflower
stems as this chutney is made by using them.
Recipe for Cauliflower Chutney Ingredients
• Stems from the cauliflower
• Green chillies - 8-9
• Jeera - 1 teaspoon
• Oil - 1 tsp
• Roasted Peanuts - 1 tbsp
• Lemon juice - 1 tbsp
• Mustard seeds
• Jeera seeds
• A pinch of Turmeric
• A pinch of Hing
• Curry leaves
• Finely chopped coriander leaves
• Salt to taste
Method of Preparing Recipe for Cauliflower Chutney:
Chop the stems of the cauliflower and keep aside. Wash the coriander leaves
and chop them finely and keep aside.
Method of Cooking Recipe for Cauliflower Chutney
Heat a tablespoon of oil in a pan, add jeera, green chillies, cauliflower
stems and sauté them and cover it with a lid till the cauliflower
stems are cooked and brown in colour. Allow to cool.
Grinding
Take a Jar, add roasted peanuts, cooked cauliflower stems mixture, lemon
juice and salt. Add little water and grind it in mixer till the consistence
of chutney is formed
Tempering
Take a small pan heat 1tsp of oil add the mustard seeds, cumin seeds,
curry leaves, hing and turmeric then pour it on top of the chutney. Sprinkle
the finely chopped fresh coriander leaves on top of the chutney.
Method of serving
This cauliflower chutney can be very well served with idly, dosa, roti
and can also be served as a side dish along with the main course.
Summary
The cauliflower chutney is so popular because we don’t have to throw
away the stems of cauliflower that is always more than the florets and
it can be preserved in the refrigerator for a week.
