Introduction Kerala cauliflower recipes, south Indian
As the name suggests it is prepared with more of coconut and also the
various vegetables are added and cooked in a gravy form it consumes less
time to cook. It is very nutritious too.
Ingredients
1. Cauliflower florets – separated from 1 Big Cauliflower
2. Carrots (diced into medium cubes) – 2 big
3. Potatoes (diced into medium cubes) – 1 big
4. Sliced Onions – 1 medium
5. Chopped Tomatoes – 1 medium
6. Slit Green Chillies – 2 medium
7. Finely Chopped Garlic – 1 tsp
8. Grated Ginger – 1 tsp
9. Curry Leaves – A sprig
10. Oil – 2 tbsp
11. Mustard seeds
12. Garam Masala Powder – 1 tsp
13. Turmeric Powder – 1/2 tsp
14. Chili Powder – 1 tsp
15. Chicken or Meat Masala Powder – 2 tsp
16. Salt – as required
17. Water – as required
Method of preparing Kerala cauliflower recipes, south Indian
Cutting
Separate the florets from the cauliflower and wash them. Peel the carrot,
potato and dice in medium cubes. Cut the onion in to thin slices. Cut
the tomato in to small cubes. Slit the green chillies in to two. Grate
the ginger and garlic and keep it ready.
Grinding
1. Grated Coconut – 1
2. Cashew nuts – 3 (optional)
3. Salt – a pinch
4. Turmeric Powder – a pinch
Take a jar put the grated coconut, cashew nuts, a pinch of salt, and
turmeric and grind to a coarse paste and keep aside.

Heat 2 tbsp of oil in a pan and add mustard seeds wait till it splutters.
Then add onions, curry leaves, green chillies, grated ginger and garlic
and sauté till the onions are light pink in colour. Now, add tomatoes
and stir until soft and cooked. Add 1 tsp garam masala powder, 1/2 tsp
turmeric powder, 1 tsp red chili powder, 2 tsp meat masala powder and
mix for a minute.
Now, add the cauliflower florets, potatoes and carrots along with required
amount of salt and mix well so that the vegetables are coated with the
masala. Add1/4 cup of water to the mixture and cover it with a lid and
allow it to boil for 15 minutes stir it in the intervals. And finally
add the coconut paste to the vegetables and mix well.
Allow the vegetables to cook in the coconut paste until all water has
evaporated.
Method of serving
Take a serving bowl pour the cooked mixture in to it and garnish it with
freshly chopped coriander leaves. Serve it hot with any variety of pulao
or even with any Indian bread like naan, rumali roti and kulcha.
