Method of cooking Cauliflower sabji
Cauliflower sabji Introduction
It is a popular north Indian dish that can be prepared with one or more
vegetable in few minutes. As it contains variety of vegetables it is rich
in proteins, vitamins and fibre.
Ingredients
• 1 small cauliflower
• 1 medium potato
• 1 small onion
• 2 medium tomatoes
• 2 cloves garlic
• 1“ ginger
• Handful of chopped Coriander leaves
• 2 tsp Kasthuri methi
• Turmeric
• 2 tsp Kitchen King Masala (optional)
• 2 tsp Jeera Dhaniya powder (Dried Cumin and coriander powder)
• Red Chilli powder as per taste
• Jeera seeds
• Mustard seeds
• Oil, Salt to taste
Method of preparing Cauliflower sabji
Cutting
Separate the florets from the head of the cauliflower and cut the stem
of the cauliflower in to thin slices wash them and keep aside. Chop the
tomatoes and onions in to small pieces and keep it ready. Peel the potato
and cut in to small cubes and keep aside. Slice the ginger and garlic
finely and keep it.
Method of cooking Cauliflower sabji
Take microwave safe bowl pour water add enough salt and put the cubed
potatoes and microwave for 3 minutes. See that the potato is cooked but
not very tender. Remove the potato and now add the florets with salt,
turmeric and cook for 2 minutes and drain the water completely and keep
aside,
Note if there is no microwave then cook the above vegetables on medium
flame
Heat oil in a broad pan and add jeera, mustard seeds wait till it splutters.
Add chopped ginger, garlic and sauté till light brown in colour
then add chopped onions stir till they turn pink in colour now add salt
as required, turmeric, chilli powder and mix well then add tomatoes with
Dhaniya jeera powder sauté well till the tomatoes are well cooked
and the oil oozes out of the gravy. Now add the cooked vegetables and
cover it with a lid and simmer it for few minutes. Sprinkle water in between
if required.
If needed a little bit of Kasthuri methi can be added to the gravy at
the end to add to the aroma (optional). Finally garnish with chopped coriander
leaves.
Method of serving Cauliflower sabji
This cauliflower sabji can be served with any Indian bread like naan,
kulcha, rumali roti and even with dosa or utthapam.
