Cauliflower Vindaloo Introduction


This recipe is basically made in Kerala with a little bit of sweetness in it. It is very easy to cook with the easily available ingredients at home.

Ingredients
1. Cauliflower - 1 (cut into med size pieces)
2. Coriander seeds - 1 Tsp
3. Cumin seeds - 1 Tsp
4. Mustard seeds - 2 Tsp
5. Turmeric powder - 1 tsp
6. Dry red chillies – 10
7. Coconut grated fresh or (desiccated) – 1/3 cup
8. Fresh Ginger-Garlic paste - 1 tbsp
9. Oil - 5 Tbsp
10. Cinnamon - 1 inch
11. Cloves - 6 whole
12. Onions - 1 Cup (finely chopped)
13. Red paprika - 1 tbsp
14. Jaggery - ½ tsp
15. Water - 1 cup, juice of 1 lemon
16. Salt - as per taste

Method of preparing Cauliflower Vindaloo


Cutting
Chop the onions finely and keep aside. Cut the cauliflower in to medium pieces and wash them. Grate the coconut and keep it ready.

Grinding
Grind the ginger and garlic to a smooth paste. Take a jar put the coconut, red chillies, coriander seeds, cumin seeds, mustard seeds and grind to a smooth paste.

Mixture
Take a bowl and add turmeric, ginger garlic paste, lime juice and add the ground paste and mix well.

Marination
In this mixture now marinate the pieces of cauliflower make sure that each piece is coated. Cover the bowl with a lid and allow it to marinate for an hour in the refrigerator.

Method of cooking Cauliflower Vindaloo


Heat oil in a shallow pan then add cloves, cinnamon, and onions fry till light brown in colour then add a little bit of ginger garlic paste stir well. Now add the marinated cauliflower without the liquid and simmer for five minutes. Add Jaggery, paprika, and the left over marinated liquid and bring to boil. Cook till the cauliflower becomes soft and tender.

Method of serving
Take a serving plate place the cooked cauliflower on one side and place some banana chips on the other side of the plate. Tastes best when served piping hot.

Summary
This recipe can be prepared instead of any sweet as it contains Jaggery and it is very delicious to eat and your family, guests will lick their fingers and compliment you.
