For cooking whole brinjal curry or whole baingan curry small brinjals are used to cook .Slits are made on these brinjals without separating the pieces & keeping the stalk intact .
Whole brinjal or whole baingan curry is rich with gravy so is ideal to have it with rice or with chapattis .
In addition to whole brinjals ,we need small sized onion ,chilli powder ,tamaraind paste ,coconut etc .The cooking of whole brinjal curry may take 5-10 minutes .
First of all we have to make a paste of onion,channa dal,urudal,coriander seeds,red chillies,coconut by grinding all these ingredients .

Let us have look at the main ingredients required for cooking whole brinjal cocunut curry

1. Brinjal the small - 4
2. Small size onion - 1 (cutted)
3. Mustard seeds - 1/2 tsp
4. Curry leaves - as needed
5. Oil,salt - as needed
6. chilli powder -1 tsp (optional)
7. Tamaraind thick watery paste -2 tsp

For Paste
1. Small onion - 1
2. Channa dal /Kadala paruppu - 1 tsp
3. Urudal - 1 tsp
4. Corriander seeds - 1 tsp
5. Red chillies - 4
6. Coconut -3 tsp
7. little salt
8. Turmeric powder - 1/2 tsp

Method of cooking Whole brinjal cocunut curry/Small brinjal curry

First of all let us clean the small whole brinjals with water & slit it using a sharp knife without separating the pieces so that we could fill the paste inside the brinjal through the slits .You could keep the brinjals in cold salt water to avoid these whole brinjals turning black due to oxidation .

Next let us fry all the ingredients meant for paste in a pan using 1 tsp oil for 3 minutes & later grind all the ingredients together to make a fine paste ,add little water while grinding (see the ingredients for paste )

Now we have brinjals & paste ready ,fill the slits of the whole brinjals with this paste .

Take a pan ,heat 4 tsp of oil & add mustard seeds ,let it to splutter ,add curry leaves,add onion & fry it for 2 mins,put the brinjals stuffed with paste into the pan ,fry these whole stuffed brinjals till the outer layer is cooked & the brinjals starts to shrink .

Add the remaining paste to the kadai ,add chilli powder for your taste & add water ,close the pan with a lid and allow it to boil for few minutes ,when the brinjals turns soft add tamarind paste or tamarind water .
Cook until the raw vegetable & powder smell goes & gravy thickens & the oil separates on top ,now the gravy will have good consistency ,it indicates that your whole brinjals curry is ready for serving .
