White brinjal recipe cooking
Cooking white brinjal recipes is like any other brinjal recipe .White
brinjals are normally available in the market .This while brinjal recipe
is more nutritious as we have fresh red beans as an ingredient in this
white brinjal recipe .
In addition to while brinjals & red beans we should have onion,garlic
pods,tomatos,ginger,masala powder ,tamarind juice ,mustard cumin ,fenugreek
required to cook this whole white brinjal curry recipe .
This white baingan recipe is spicy in nature ,so now let us have a look
at the quantities of ingredients for preparing whole white brinjal curry
.
Ingredients:
. Fresh Red Beans 1 1/2 cups (dry Red Kidney Beans)
. 6 garlic pods
. 1 ripe tomato diced
. 1/2 inch ginger
. 1 1/2 tbsp masala powder (the ingredients below)
. White Brinjals about 20 (slit in half, not cutting them completely)
. 1 Red Onion (3/4 onion roughly chopped) 1/4 diced fine
. 1/4 tamarind juice (soak tamarind in water and squeeze the pulp out)
or 1 tsp of tamarind paste
. seasoning - mustard, cumin, fenugreek curry leaves
. corriander leaves
Masala Powder:
1. 1/4 tsp cumin
2. 1 tsp corrinader seeds
3. 4-5 red chillies
4. 1 tsp pepper
5. 1 cardamom
Method of cooking White Whole brinjal curry reciepe
Dry roast the above and powder. Coffee Grinder comes in very handy for
making these powders.
Making Masala powder
First of all let us make the masala powder required for our while brinjal
curry .dry roast the above ingredients for masala powder & grind it
,you can use coffee grinder for this purpose .
Clean the brinjals using water & slit the brinjals without separating
the pieces & the stalk intact .
Heat oil in a pan sauté onion till it turns brown ,add garlic,ginger
& sauté for minutes,add chopped tomatoes and cook till they
turn soft .Blend this mixture to a paste & remove it from the pan
and keep seperately .(even you may experiment to grind this mixture )
Clean the pan with water & again heat oil in the pan –add seasonings,cumin,fenugreek,curry
leaves,mustard ,after spluttering the mustards add onions & sauté
until onion turn brown ,Now add masala to this mixture & mix well
,you should carefully choose the flame ,so that masala powder won’t
get burned .
Now add the brinjal & sauté for few minute ,now its turn for
red beans ,add them sauté for minute and add salt to taste .
Add the tamarind juice & when it starts to boil add ground mixture
and mix well ,cover the lid and cook till the red beans well cooked &
turned soft .Garnish with coriander leaves
