Thai brinjal recipe how to cook
Thai brinjal recipe is little bit different from Indian brinjal recipes
,as the ingredients & method of cooking is different – this
thai brinjal recipe used brinjal,garlic,ginger,potato,chilli,cumins,black
pepper powder ,tomatoes .
• Brinjal 2 medium sized
• Garlic 5 flakes
• Ginger 1inch
• Onion 1 large
• Salt 2tsp
• Turmeric powder 1tsp
• Egg- 2 nos
• Tomato – 1 small and ripe
Potato – 3 Medium sized
• Chilli – 2
• Cumin seed 1tsp
• Black pepper powder- ½ tsp
• Coriander leaves 1 bunch
• Oil to fry 2 tbsp
How to cook Thai brinjal recipe
The method of cooking thai brinjal recipe is given below.Clean the brinjals,roast
the brinjals ,you may use an oven or a pan .After softening the brinjal
peel the skin & mash it .In the same way boil the potatoes & peel
its skin ,and mash it .
Add mashed ppotatoes into the mashed brinjals ,add turmeric powder ,add
salt to taste & mix it well .
Heat oil in a pan & add cumin seeds ,after spluttering the seeds,add
finely chopped onions,sauté it till the onion turns brownish ,now
add ginger juliennes and chopped garlic ,chilli into it ,fry till it turns
golden color .
Add mashed potatoes & brinjals to the above said mixture ,sauté
for few minutes ,when the oil starts separating add cumin powder .
Beat the egg & add salt to it ,Spread the fried stuff to the edge
of the pan so that the oil gets collected in the middle of the pan .Add
the egg & mix thoroughly till properly cooked ,Add black pepper powder
,turn off the gas and garnish with fresh coriander leaves & chopped
tomato pieces .
Now your thai brinjal recipe is ready to be served with parathas or rice
