Stuffed brinjal recipes are prepared normally with small and fresh brinjals
,because it is easy to be cooked .I had saw some people use big brinjals
for preparing stuffed brinjal curry ,in this case they use big utensils
for cooking ,& big is also good to eat ,in cooking always you can
experiment variants .Just like how tirupati ladoos big size is famous
.
To prepare stuffed brinjal recipe you have to do the extra work of making
the paste/mixture for stuffing inside the brinjal & you have to make
slits lengthwise along the brinjals without separating the pieces &
leaving the stalk intact .
Now let us have a look at the main ingredients used for cooking brinjals
stuffed ,we need small violet brinjals ,tomatoes & onions ,chilli
powder,turmeric powder ,& garam masala,green chilli,mustard seeds,jeera,peanuts,sesame
seeds,coconut,ginger garlic paste .
Here is the list of quantity of ingredients for cooking stuffed brinjal
curry ,remember to keep everything ready before cooking starts ,once you
starts cooking you should not leave the cooking place .Keep every thing
ready ,keep ready the brinjals stuffed,vegetables chopped ,powders need
for cooking near you .If you search for ingredients while cooking ,chances
are that you will end spoiling your dish .
Ingredients
Violet brinjals-10 (choose fresh and small ones)
Tomatoes-2 finely chopped
Mustard seeds- ¼ tsp
Jeera- ¼ tsp
Turmeric powder- ¼ tsp
Coriander leaves- finely chopped 2 tsp
Onions-3 finely chopped
Chilli powder- 1 tsp
Green chilli- 1 chopped finely
Oil- 6 tsp
To grind
Peanuts-6 tsp dry roasted
Ginger garlic paste- 2 tsp
Garam masala- 1tsp
Salt to taste
Sesame seeds-6 tsp dry roasted
Coconut grated- 2 tsp
Method of cooking Stuffed brinjal recipe
Let us make things ready ,first of all we will start with grinding the
masala required for stuffing ,grind all the ingredients – peanuts,ginger-garlic,garam
masala,salt,sesame seeds,coconut .Always try to do grinding like activities
in the first place because any time power supply could fail in our country
,if it happens our cooking schedule will fail ,so don’t take chances
grind it first .
Now its time look at brinjals – for stuffing brinjals we have to
slit brinjals in length wise ,but should not separate the pieces &
should leave the stalk intact – start cutting from opposite end
of stem –cut it down up to 3/4th length ,again make a slit perpendicular
to it ,now the brinjal is cut into 4 pieces or slits ,still base of all
pieces unified at its bottom side .
Now stuff the brinjals with the masala we have prepared through its slits
.The balance of the masala you could add to the curry while cooking .
Now chop onions & tomatoes .
Now we will start cooking our todays Indian brinjal curry – stuffed
brinjal .
Heat up the pan ,add oil to it ,add mustard seeds & jeera allow it
to splutter completely .Now add onions and green chillies ,Sauté
for some time ,and then add the brinjals & remaining masala paste
.Fry for few minutes .Now add chopped tomatoes ,turmeric powder ,chilli
powder ,salt & half cup of water .Close the pan with a lid ,keep the
flame to minimum(sim) and keep stirring every few minutes with out smashing
the brinjals .Cooking brinjals may take a long time around 40 minutes
,as we have kept the flame low – should not increase the flame to
high as the powders we have added may get sticked to the bottom of the
pan & may get burned ,so it is necessary to keep the flame low, closing
the lid ,so that steam will not escape ,stir every 5 minutes .
When you notice that brinjal turns soft & the oil floats to the top
it indicates that the brinjal is cooked ,now switch off the flame &
garnish the curry with coriander leaves .
Serve the stuffed brinjals with hot rice & ghee .
