South Indian brinjal recipes are tasty & healthy .South india means southern part of india comprising of 5 southern states of India ie ; Kerala ,Tamilnadu , Pondicherry ,Karnataka, & Andhra Pradesh . This is a common south Indian recipe using brinjal or baingan as its main ingredient .Other ingredients required for this south Indian brinjal recipe are onion,chillies,cinnamon ,pepper corns,cloves,caraway seeds ,tamarind & cocunute ,by looking its ingredients list you will understand that this is a spicy south Indian brinjal recipe .

Ingredients
• 1 cup of Brinjals (Baingan) (chopped in pieces)
• ¾ cup Onion (chopped)
¾ cup of Coconut (Khopra)
• Salt (to taste)
• 1 tsp. Cooking Oil
3 Peppercorns (Bari Ilaichi)
• 4 Cloves (Loung)
• ½ tsp. Caraway Seeds (Shahi Zeera)
• ½ tsp. Coriander Seeds (Saabut Dhania)
• 4 Red Chillies (Lal Mirch) (or to taste)
• A (2 inch) piece of Cinnamon Stick (Dal Cheeni)
• ½ tsp. Tamarind (Imli)

Method of cooking South indian brinjal recipes

Clean the brinjals in water & ct them into big pieces & soak thoroughly in water for 15 minutes for the removal of any bitterness from brinjals .
Heat 1 tea spoon of oil in pan ,fry red chillies,coriander seeds,cloves,pepper,cinnamon,caraway seeds .Add quarter cup of chopped onion & fry it till it turns brown .Keep the flame low & add cocunut & fry it for 5 minutes .After cooling the mixture grind it to paste with tamarind .
Heat the oil & fry the remaining onion till it turns brownish ,drain water from the brinjals & add them to the onion & fry together for 2 or 3 minutes .
Add half cup water and cook until brinjals turn soft . Add the ground masala,salt and cook for 5 minutes or more till it cooked completely .
