Brinjal Kotsu -Recipe with brinjal

This recipe using brinjal is called as - Brinjal Kotsu
Big brinjals,green chillies ,onion,curry leaves,coconut,tamarind,urad dal,mustard are the main ingredients for cooking this recipe with brinjal .

• 5 Big brinjals
• 8 Green chillies, finely chopped
• Tamarind, gooseberry size
• A pinch of turmeric powder
• A pinch of asafoetida
• 1 tsp Urad dal
• 1 tsp Mustard
• 1 Big onion, finely chopped
• 1 Sprig curry leaves, chopped
• 1 tbsp Coconut scraping
• 1 tsp Salt
• 1 tbsp Oil

How to make Brinjal Kotsu:

Wash the brinjals & cut them into big pices ,take a pan & cook brinjals with little water ,keep the lid of the pan closed tightly till brinjal turns to be soft .

Make a paste by grinding the cooked brinjal ,with coconut & tamarind .Heat the oil in a pan & add mustard seeds ,allow them to splutter ,now add asaefoetida ,urad dal and fry until golden brown .Add green chillies,curry leaves ,and onion ,fry it for 5 minutes ,Now mix the brinjal paste ,salt,turmeric and little water ,Simmer the mixture for 2 or 3 minutes in low flame .

Now your Brinjal Kotsu is ready to serve
