Recipe for brinjal curry with potato ,this is a recipes of brinjal using
potato .This Brinjal potato mixed curry is nice to be served with chapatti
or roti .

could replace potato with some other vegetable like drumstick or beetroot

masala,dhania powder,amchoor powder,turmeric,red chilli ,asafoetida,cumin
& mustard,little sugar,curd .
Here is the list of ingredients required for cooking brinjal mixed curry
with potato ,keep all the ingredients ready before start cooking .
Brinjal Potato Mixed Curry
Ingredients:
1 large potato
1 large or 2-3 small brinjals
1/2 tsp. Amchoor powder (dried mango)
1/4 tsp. Turmeric
1 large onion chopped in vertical strips
1 tomato ripe finely chopped
1 small capsicum halved and thinly sliced
1 tsp. Fresh coriander leaves finely chopped
1 stalk curry leaves
1 tsp. Sambhar masala
1/2 tsp. Each cumin & mustard seeds
1/2 tsp. sugar
salt to taste
1/2 tsp. Dhania (coriander seed) powder
1/4 tsp. Red chilli powder
3-4 pinches asafoetida
1 tbsp.fresh curds
1 tbsp. oil
Method of cooking brinjal curry recipe with potato .
Step 1 : Chopping Potato,Brinjal,onion,tomatoes,coriander
Brinjal : Chop brinjal too into 2 inch long thick pieces ,the equal size
with potatoes will make the pieces to be cooked easily & looks great
.Keep the pieces in cold salt water to avoid brinjal turning black .
Marinate brinjals : Drain water & sprinkle salt & turmeric powder
over brinjal .Mix curds sugar &1/2 Sambhar powder and salt to taste
,pur half this mixture over brinjals & half over potatoes ,cover it
& marinate for 30 minutes
Potatoes : Do not peel potatoes ,instead of the scrub and clean ,chop
them into 2 inch long pieces .
Onion coriander & Capsicum : Chop them finely
Step 2 : Frying & garnishing
Take a heavy pan & heat oil ,Add capsicum,onion,stir the fry for 2
minutes ,drain & remove the fried ingredients using a perforated spoon
& keep aside .
Add mustard & cumin seeds ,allow to splutter and add asafoetids powder
to remaining oil in the pan add curry leaves ,Add marinated brinjals &
potatoes ,stir fry for one minute .
Make a paste of all masalas ie by mixing Amchoor powder , Turmeric , Sambhar
masala , Dhania (coriander seed) powder and salt in ½ cup water
& add this paste to the vegetables in the pan ,Stir add the chopped
tomatoes ,Saute till excess water evaporates & the curry turns thick
.
Now your brinjal potato masala curry is ready ,transfer it into a serving
dish ,garnish it with stir fried capsicum, onion & coriander
