Purple brinjal recipes are tasty & looks nice ,the purple color in the backdrop of gravy color make it looks great ,here we have brinjal curry using purple brinjals named as – Brinjal masala curry .The ingredients for this purple brinjal masala curry includes small purple brinjals,fennel,cinnamon,cloves,peppecorns,cashews,ginger,garlic,green chillies,shredded coconut,onion,coriander leaves .
As it is purple brinjal masala curry we have to prepare ground masala by grinding masala ingredients .Here is the list of purple brinjal masala curry ingredients with their quantity .

Brinjal Masala Curry
Ingredients:
Small brinjals - 6 to 10 nos
Turmeric powder - 1/4 tsp
Oil
Salt
Grind:
Sombu(fennel) - 1 tsp
Cinnamon - 1 inch long
Cashews - 5 if whole
Ginger - a small piece
Garlic - 2 cloves
Cloves - 2 nos
Peppercorns - 1/2 tsp
Onion - 1/2 (cut into pieces)
Green chillies - 2 nos
Shredded coconut - 2 tsp
Coriander leaves - a handful


Method of cooking Purple brinjal masala curry recipe

Step 1 : Preparing purple brinjal curry masala

Grind all the ingredients (the ingredients to be grinded are given above ,refer to the list below the title grind ), by adding little amount of water and salt-grind it till it makes a fine paste .

Fry the ground masala paste in little oil in a pan & till it losses its raw smell ,remove it from the pan and store in a small cup –this will be used for stuffing & the masala remains after the stuffing will be added to the curry later .

Step 2 : Stuffing the purple brinjals with ground masala & cooking

Wash & clean the brinjals ,now cut the brinjals halfway through like + ,without separating the brinjal pieces & leave the stalk intact .

Now stuff the purple brinjal with the fried grounded masala ,now heat the kadai with oul ,place the stuffed purple brinjals carefully inside the pan & turn it slowly inbetween till it cooked on the sides .
Add little water & close the pan & let the purple brinjals to be cooked fully .If your ground masala remains add it to the pan – keep on boiling the curry till the the water disappears .

Now your purple brinjal masala curry is ready garnish it with chopped coriander leaves
