Brinjal curry cooking method
Let us prepare brinjal curry today ,brinjal curry is a gravy based recipe,so
you have to do some grinding to make masala paste for preparing brinjal
curry ,it will be more tasty if you grind the ingredients for paste after
frying it ,as you do when you make sambar masla .
The ingredients required to prepare brinjal curry ,in addition to small
fresh brinjals , are coconut,onion,ginger,garlic,peanuts,til seeds,tamarind,red
chilli,asafoetida,gingili oil,turmeric powder,poppy seeds .
Brinjals in Gravy
Ingredients:
Brinjals (small) 500gms
Peanuts 50 gms
Til seeds (gingelly seeds)
Tamarind 25 gms
Whole Red Chilli 25 gms
Asafoetida-a pinch
Gingily Oil-250 ml
Coconut 1/2 nos.
Turmeric powder-10 mgs
Poppy seeds-25 gms
Salt to taste
Curry Leaves a few sprigs.
Onion 300 gms
Ginger 25 gms
Garlic 25 gms
Keep ready the ingredients properly arranged near to you ,now let us
start preparing brinjal curry
Method of preparing brinjal curry
Step 1 :Chop vegetables :Wash & Chop brinjals into 4 pieces ,Slice
onions,grind coconut,take juice of tamarind & keep aside
Step 2 :Preparing the ground masala :Frying & grinding
Fry all the ingredients (except brinjal ,tamarind & salt ) in a pan
– Grind all the ingredients into a paste .
Step 3 : Frying brinjals
Pour oil into a pan & deep fry the brinjals till they are cooked
Step 4 :Fry masala
Add few tbl spoon of oil & fry the ground paste .
Step 4 :Finishing
Add fried brinjals into the completely fried paste & add the tamarind
juice /pulp and cook for some time ,when brinjal s are done ,check salt
,add if necessary –Serve garnished with fried curry leaves .
