Indian brinjal recipes are famously tasty ,this special Indian brinjal recipe is prepared with common ingredients available in your kitchen .The main ingredients for cooking this Indian brinjal/baingan recipes are – ground nuts,curd,onions,sugar,garlic,ginger,garam masala & other common ingredients .

Here is the list of ingredients & their quantities for cooking Indian baingan/brinjal recipe –Stuffed brinjal recipe


3 tblsp roasted groundnuts (moong phali) powdered coarsely
3 medium onions (pyaj) very finely cut
1 1/2 sugar (cheeni)
8-10 small rounded firm brinjals (baigan)
1 tsp garlic-ginger (adrak - lahsan) paste or grated
1 tsp garam masala
1 tsp chilli powder
1 tsp coriander powder (dhania)
2-3 tblsp oil (tel)
1/2 tsp mustard seeds (raai)
1/2 tsp cumin seeds (jeera)
1/4 cup curds (dahi)
salt (namak) to taste
3 tblsp grated fresh coconut (nariyal)

How to make Indian stuffed brinjals:

Making filler : Mix onions ,cocunut,all dry masalas ,curds ,ginger garlic paste to make the filler ,this filler will be filled inside the brinjal through its slits .

Wash the brinjals thoroughly ,Slit the brinjal along its length up to 3/4th of its lengh ,make such two slits so that the brinjal is wide open so that we could fill it with onion coconut mix .Stuff the slits with the filler .
Heat oil in a heavy bottomed pan ,mix mustard,cumin seeds ,after spluttering slide in the brinjals slowly ,Cover the mixture ,add two cup water ,cook in low flame ,remember to stir it one or twice inbetween .Cook until brinjals turn soft .

Now your’s stuffed Indian baingan recipe is ready to be served with rice .

Note : While slitting the brinjal remember to make two slits to form a cross & leave the stalks intact & keep the brinjal in cold salt water to avoid its coloration .
