Brinjal curry is the best suitable recipe with hot rice & ghee .Brinjal curry also a good combination with chapattis .

It is simple to cook brinjal curry;for preparing baingan curry you just need to have 1 or 2 brinjals with garam masala,pepper powder,mango powder,jeea powder & chilli powder .

Let us have look at the ingredients required for preparing brinjal curry

Brinjals - 1 Big or 3-4 small
1/2 tsp pepper powder
1/2 tsp mango powder
1 tsp. dhaniajeera powder
1/2 tsp. garam masala
Salt and chilli powder to taste

Method of cooking brinjal curry

Now its time too cook brinjal curry ,this is actually to be called as brinjal masala curry recipe ,as it is little spicy recipe .

Wash & cut the brinjal into half & cut each half into 3 slices & make fine slits on each slice –these sizes are not mandatory ,you can cut as per your convenience ,even though to cook easily its better to have not too big pieces –always maintain medium size for the slices .
Mix all the above spices & rub n fill it nicely on the slices ,take a pan & heat 4 tablespoon of oil & put the brinjals cut side down into the pan .Keep a lid over the pan to cover it air tight ,simmer to cook in low flame .Turn in between in the pieces to boil brinjal pieces uniformly until brinjals turn soft .

Now your brinjal curry recipe is readty, now your brinjals & masala are transformed into a tasty & healthy brinjal curry ,serve it hot with rice .
